Our Story
Signature bowls, Kumamoto roots. Each is built on a Berkshire pork bone broth and finished by hand — a short list, made properly.

Berkshire pork bone broth, thin straight noodle, chashu, bamboo shoots, kikurage, red ginger, scallions and a seasoned egg.

Tonkotsu with chicken and seafood broth, wavy egg noodle, chashu, kimchee, kikurage, bean sprout and egg.

Pork bone broth with mayu oil — dark roasted leek and crushed garlic — chashu, red ginger and a seasoned egg.

Light soy and chicken broth, wavy egg noodle, roast pork or chicken, bamboo shoots, fish cake and egg.

Mayu pork broth, medium-thick noodle, chashu, two seasoned eggs, kikurage, cabbage and bean sprouts.

Slow-roasted pork, crisp butter leaf lettuce, cured tomato and spicy mayo on a soft or crispy bun.

Simmered for a full two days until the pork bones surrender a deep, well-developed flavor that can only be described by experiencing it.

Two styles — thick wavy egg, or thin straight Kyushu — both made fresh and cooked al dente, as they keep cooking in the broth.
